When Italy was created in 1871 from at least 16 often-warring states, Pellegrino Artusi (known as the “Father of Italian Cookery”) was the man that had chronicled and published the regional recipes. His cookbook is not just a collection of recipes, of course, it is a witty and informative social history too.
