Renato’s grandfather had the village shop in beautiful medieval hilltop castle village Roncofreddo. When Renato was a child, every week local farmers came with their cheese in exchange for credit. Renato’s job? To choose the cheese that the family would keep and mature and set by the rest for quick sale.
So almost all his life, Renato has been choosing and maturing cheese – not a bad job for someone who is passionate about the subject.
